Eggless Salmon Quiche Recipe


Salmon Quiche is extremely versatile. Serve it as an appetizer or as a main course. It's equally comfortable at your Shabbat table or your weekday dinner. To make this a gluten free quiche simply use gluten free frozen pie crusts and gluten free "bread" crumbs. Serve hot!

3 frozen pie crusts
3 large onions (chopped)
3 large cans red salmon
1/3 cup matzoh meal or breadcrumbs
2T mustard
2T lemon juice
dash black pepper
1/2 cup oil
1 cup seltzer and egg replacer (equivalent of 5 eggs)
dried parsley flakes

Preheat oven to 400. Sautee onions and set aside. In a separate bowl debone canned salmon. Combine all ingredients until consistent and smooth. Place sauteed onion in pie crusts. Fill each pie with salmon filling and sprinkle generously with parsley flakes . Bake for an hour till tops are golden brown

Gluten Free Oat Challah

    
For those who can tolerate gluten free oats, here are some fabulous challah recipes.
Gluten free challah dough is often more like batter than dough (very difficult to shape or braid).
A great trick is to use silicone pans that are shaped like challahs (think "challah molds").

Sukkos Tips


Yom Kippur is over, now on to Sukkos! Below are some sure-fire tips to get you in gear for a wonderful Chag!


  1. Get that Sukka Up (avoid last minute sukka set up syndrome)
  2. Make Sukka Decorating a Family Affair
  3. Purchase Pretty Paper Goods (disposables make sukka living a breeze)
  4. Check the Weather and plan meals accordingly
  5. Serve Hot Soups for Cold Sukkah Nights
  6. Serve Chilled Appetizers and Desserts for Day Meals
  7. Cook ahead for last days as well (so you can make the most of Chol Homoed )

New FDA Gluten-Free Standards



The FDA, after conducting a gluten safety assessment has established new guidelines for the term "gluten-free".

New definition of "gluten-free":

In general, foods may be labeled “gluten-free” if they meet the definition and otherwise comply with the final rule’s requirements. More specifically, the final rule defines "gluten-free" as meaning that the food either is inherently gluten free; or does not contain an ingredient that is: 1) a gluten-containing grain (e.g., spelt wheat); 2) derived from a gluten-containing grain that has not been processed to remove gluten (e.g., wheat flour); or 3) derived from a gluten-containing grain that has been processed to remove gluten (e.g., wheat starch), if the use of that ingredient results in the presence of 20 parts per million (ppm) or more gluten in the food. Also, any unavoidable presence of gluten in the food must be less than 20 ppm. (source: FDA website)

In other words, a "gluten-free" food can not have more than .002 percent of gluten .

Yom Kippur Tips


Yom Kippur is an amazing Yom Tov.! How wonderful that G-d gives us 1 day a year that's like a "spirtual car wash". Through abstention from physical pleasures (like eating) and connecting to G-d through prayers we truly become like angels. In order to have the physical stamina for this spiritually uplifting day follow the tips below:


  1. Eat properly in the days preceding the fast
  2. Drink plenty of water the entire day before
  3. Eat high water content fruits and vegetables 
  4. Eat high carb foods for long term energy
  5. Avoid spicy and greasy foods before fasting
  6. Avoid caffeine, salt, and alcohol before fasting
  7. Prepare your post fast meal in advance so it's ready
