Tapioca flour is a staple of gluten free baking. Derived from the root of the Cassava plant, Tapioca is a fabulous thickener and gluten substitute. Living Now makes a Tapioca flour that is organic, kosher certified (CRC), pareve, and made in a dedicated facility(free of gluten and other allergens). I'm still searching for Tapioca flour with a Passover Hechsher. I'll keep you posted when it's that time of year.
