Salmon Quiche is extremely versatile. Serve it as an appetizer or as a main course. It's equally comfortable at your Shabbat table or your weekday dinner. To make this a gluten free quiche simply use gluten free frozen pie crusts and gluten free "bread" crumbs. Serve hot!
3 frozen pie crusts
3 large onions (chopped)
3 large cans red salmon
1/3 cup matzoh meal or breadcrumbs
2T mustard
2T lemon juice
dash black pepper
1/2 cup oil
1 cup seltzer and egg replacer (equivalent of 5 eggs)
dried parsley flakes
Preheat oven to 400. Sautee onions and set aside. In a separate bowl debone canned salmon. Combine all ingredients until consistent and smooth. Place sauteed onion in pie crusts. Fill each pie with salmon filling and sprinkle generously with parsley flakes . Bake for an hour till tops are golden brown
