Passover List- Dry Goods

Heading out to do some Passover shopping? Feeling a bit overwhelmed?
Use my lists as a starting point and then customize to your individual needs.
I will be dividing up this list into 3 separate blog posts: Passover Dry Goods, Freezer, and Refrigerated

*Money Saving Tip- purchase regular and brown sugar in regular baking section (needs
kosher for passover certification). Purchase Instant Coffee there as well (needs Passover Certification)

Passover Dry Goods
Potato Starch
Ground Unsweetened Coconut (instead of ground nuts for baking)
Cake Meal/Matzoh Meal (if tolerate wheat and can have gebrokts)
Passover "Crumbs" (for "breading" chicken cutlets)
Cottonseed Oil
Baking Spray (not the butter flavored it's nasty)
*Brown Sugar
*Regular Sugar
Vanilla extract
Chocolate Chips (lots of them)
Jam (apricot, strawberry, and raspberry)
*Instant Coffee
Vinegar (white and balsamic)
Ketchup (lots of it for meat sauces)
Marinara Sauce
Eggless Creamy Garlic Dressing (great for potato salad, chicken cutlet marinade)
Spices (garlic, paprika, minced onion, parsley flakes, cinnamon, Lieber's salad seasoning mix)
Salt
Applesauce (extra if used in baking for eggless recipes)
Canned Fruits (mandarin oranges, pineapple, peaches, pears)
Dried Fruits (apricot, apple, prunes if Bubbie is visiting)
Drinks (juices, nectars)

Don't forget the "Biggies": Matzah, Wine, Grape Juice



Gluten Free Passover Shopping


Passover is a phenomenal time to stock up on gluten free products!!!
Gluten free Pizza, blintzes, knishes, matzoh balls, cereal, cakes, cookies, and baking mixes are
all available this time of year.Not all kosher for passover products are gluten free. If a product lists matzo, matzo meal, cake meal, or farfel skip it. All of those ingredients typically contain wheat. Be sure to check the label for a reliable kosher symbol as well as the designation "non-gebrokts". If the item is non-gebrokts it is gluten free.Once the Passover shelves are cleared they won't be re-stocked so buy what you need now.On the flip side, after Passover, remaining items will be deeply discounted.

Gluten-Free Matzoh Ball Recipe

gluten-free matzo ball soup 
Matzo Ball Ingredients:
  • 2 eggs
  • 4 tablespoons oil
  • 2 tablespoons water
  • Salt and pepper to taste
  • 1 cup Paskesz Pesach Crumbs
Matzo Ball Method:
  1. In large bowl, beat eggs until blended. (I do this by hand, not in a mixer.) Mix in oil. Mix in water, salt and pepper. Add Pesach Crumbs and mix well.
  2. Refrigerate for at least 30 minutes.
  3. Boil 5 quarts of water and 1 teaspoon salt in a large pot.
  4. Take a teaspoon of matzo ball mixture and roll it between two hands into a ball slightly smaller than a walnut. Set aside on a plate, and repeat with remaining mixture.
  5. When all balls are ready, drop them into boiling water. Cook, uncovered, on low to medium heat for 25 minutes. Remove with slotted spoon.
Yield: 20 matzo balls

What amazing times we live in. You can have celiac and have your matzah too!!!
Checkout the gluten free matza resources below. Please be aware that in order to use matzah for the seder it must be made from the 5 grains. Potato starch based matzah cannot be used for the seder.

Gluten free Oat Matzah (Lakewood)- gluten free, contains GF oat flour (have hand and machine shmura)suitable for the seder
Gluten free Oat Matzah (England)- gluten free, contains GF oat flour (hand and machine varieties)suitable for the seder

Eggless Garlic Knots













Taanis Esther (The Fast of Esther) is almost over.
To break the fast I've made some garlic knots that are super easy and yummy

Eggless Garlic Knots Recipe
1 ball of Pizza dough (defrost if not fresh)
make snakes with the dough
drizzle olive oil and sprinkle with dried parsley flakes, garlic powder (or fresh crushed garlic)
roll up the snakes and tie in a knot
bake at 350 for 20 minutes
serve hot!

Allergy Friendly Purim Seudah- Side Dishes

       
Making allergy friendly side dishes isn't as complicated as it sounds. The approach is the same as with other dishes, know your allergies and work around them. Sometimes, there maybe a safe substitute and other times it means finding an entirely different dish (ex- you're not going to make an omelet without eggs).
If you're allergic to wheat you can find gluten free flours and pastas or serve rice or potatoes.
When avoiding eggs you can make an eggless kugel or keep things simple  (eggfree potato kugel or mashed potatoes). Those starches should all be served sparingly and keep the vegetables plentiful. The good news is that most if not all vegetables are safely tolerated. For Purim I love to serve a variety of sides "banquet style".

Safe Sides
oven potatoes - drizzle olive oil, sprinkle salt, paprika, minced onion and bake
mashed potatoes- add sauteed onions, and season to taste
baked sweet potatoes- serve whole or cut into chunks (serve naturally sweet or add sweetener such as brown sugar)
brown rice- add curry for excitement or salsa for excitement
stringbeans- sautee with gluten free soy sauce
baked cauliflower- consult with your Rabbi about checking the florets
sugar snap peas- defrost and serve plain
grilled vegetables- prepare in a very hot oven or on the BBQ (skewers for fun)
salads- the list is endless here
marinated salads, lettuce based salads, etc..

Allergy Friendly Purim Seuda- Main Dishes


So we've got those yummy eggless  onion rolls to start off with and  either a hot or cold appetizer(we're doing pina colada sorbet). Making allergy friendly main dishes is super easy(since beef, chicken, and turkey are not on the Big 8 allergen list). Allergy pitfalls in the main course are usually in the sauces (egg based) and sometimes in the crust/coatings (wheat, treenuts).Occasionally nuts can be used in the dishes (like cashew chicken) or as a garnish.

Allergy friendly Main Dishes for Purim
-meatballs (made without eggs)
-beef with stringbeans (check for gluten in soy sauce and teriyaki sauce)
-beef with broccoli ("   ")
-grilled chicken (almost always a safe food)
-chicken or beef kebobs  (also typically safe)
-bbq chicken (check sauce for gluten)
-chicken fingers (dip in pareve eggless salad dressing and coat with allowable 'breading")
-crockpot london broil

With Purim less than a week a way there's no time like the present to start planning The Purim feast.
My strategy with Shabbos and Holiday meals is always to make a menu, shop, and cook, cook, cook.

Easy Hamantaschen Recipe

Finishing up our weeklong hamantaschen marathon. We've done gluten free, eggfree, and alternative fillings.Now for a very simple recipe. Who isn't short on time? Perhaps you want an easy way to make a batch of eggfree hamantaschen for your little one. Whatever the reason, this shortcut is sure to fit the bill!

Ingredients:
1 frozen pie crust (pareve)
favorite filling (canned pie filling, jam, choc. chips etc...)
confectioner's sugar and water as needed

Directions:
Preheat oven to 350. Thaw Piecrust. Roll Piecrust dough out with a rolling pin on a surface dusted with confectioner's sugar.If mixture becomes too dry from sugar just add a bit of water sparingly.Cut circles with a glass or round cookie cutter.Place circles on a greased cookie sheet. Sparingly add filling to the center of each circle and fold sides to form a triangle. Be sure to pinch the corners so they don't unfold while baking. Bake at 350 for 10 minutes.

Hamantaschen Fillings


Whether you go with a traditional dough, an eggless, or a gluten free dough how will you fill your hamantaschen? There are a variety of allergy friendly fillings (gluten free, eggfree, and nutfree).
Stay away from fillings such as nutella,pecan pie or eggbased flavors. Let your creative juices flow.

Filling Suggestions:
Canned Pie Filling- Apple, Cherry, Raspberry, Strawberry
Preserves/Jam- Strawberry, Raspberry, Apricot, Prune
Chocolate- Chocolate chips

Gourmet options:
pareve cheesecake filling- tofutti cream cheese, sugar, vanilla extract
pareve chocolate cheesecake filling- tofutti cream cheese, sugar, cocoa, vanilla extract
drizzle hamantaschen with chocolate glaze
dip hamantaschen in melted nutfree/dairyfree chocolate
sprinkle confectioners sugar or raw sugar crystals

Brownie "Cheesecake" Hamantaschen Recipe

Do brownie cheesecake hamantaschen sound like forbidden allergic fare? Relax, these cookies are dairy free and eggfree. You can enjoy this non-traditional twist on a Purim classic!

Ingredients
1 box *Duncan Hines brownie mix (chewy fudge-pareve)
5T all purpose flour
1 stick of non-dairy margarine
1/4 cup water
1t vanilla extract
*nut allergic- DH brownie mix may contain traces of nuts/peanuts 



"Cheesecake" filling
1/3 cup tofutti cream cheese
6T sugar
1t vanilla extract

Directions
Preheat oven to 375.
In a mixing bowl cream margarine,water, and vanilla extract. Stir in brownie mix and flour till the mixture is a
soft playdough consistency. Form dough into thin patties and place on a greased baking sheet. Be sure to leave room for spreading. In a separate small bowl combine tofutti cream cheese, sugar, and vanilla extract.
Place a teaspoon of "cheesecake" filling in the center of each patty and fold sides to form 3 corners. Pinch the corners for extra security. Do not overstuff the pastries. Bake at 375 for 10 minutes. If hamantaschen lose triangular shape gently reshape them with a spatula or the side of a fork. Cool hamantaschen completely before removing from pan.

Eggless Hamantaschen Recipes


Eggless Hamantaschen
Ingredients
2 1/2 cups all-purpose flour (a little less)
2t baking powder
pinch of salt
2 sticks margarine
1c sugar
1/2 c mango nectar  
Filling Suggestions
favorite pie filling (apple, cherry, raspberry, etc...)
jam or preserves (strawberry, apricot etc..)
chocolate chips
poppy seed filling (“mon”) eggless type
Directions
Preheat oven to 375°F.
Whip margarine, sugar, and nectar. Add dry ingredients and combine to form a soft dough. Chill the dough (should feel like fresh play dough consistency) for at least 1 hr.  Form thin circles of cookie dough on a greased cookie sheet (use the bottom of a cup or a round cookie cutter).
Place less than a tsp. of desired filling in the middle of each circle and fold edges over to form a triangle. Pinch corners tightly so that triangle doesn't open up in the oven. *Thin dough out and be sparing with the filling for best resultsBake for 10 minutes or until slightly browned.  
yield: 2 dozen hamantaschen

Early Spring- Early Allergies


Punxsutawney Phil the Groundhog saw his shadow. If he's accurate, Spring's around the corner.
My son's allergist suggested starting him on a daily dose of antihistamines now before pollen season hits.
Ask your allergist if you should start any meds early to make this Spring as beautiful (and comfortable) as possible!
