Coconut Date Balls (from GourmetKosherCooking.com)
A delicious (gluten and nut free) Rosh Hashana treat that incorporates dates (a symbolic Rosh Hashana food). Gourmetkoshercooking.com has a variety of incredible, festive recipes. Many can be adapted for food allergies (like their allergy friendly Rosh Hashana salad- that includes mesclun greens,pomegranate seeds, apples, and toasted pumpkin seeds).
Ingredients
2 eggs, beaten
1 cup sugar
1 cup chopped dates
1 teaspoon vanilla
1 tablespoon margarine
3 cups Rice Krispies
1 cup shredded coconut
Directions
In a medium-sized saucepan over medium heat, combine the eggs, sugar and dates. Bring to a boil, stirring occasionally. Reduce heat slightly and simmer for 5 minutes. Remove from heat and stir in the margarine and vanilla. Mix in the Rice Krispies. Grease or wet hands with cold water and form the mixture into walnut-sized balls. Roll in coconut. Store in the refrigerator.
