Here's another way to serve up those veggies.This easy side dish that's perfect for Passover but can be served year-round. It is gluten free and nut free but not egg free.The quiche recipe is extremely versatile.
1 cup Passover mayonnaise
*4 sliced zucchini (sauteed)
1 onion (chopped and sauteed)
3 heaping T onion soup mix
Beat eggs and onion soup mix and place in a 9x13 pan that's been sprayed or greased.
Fill pan with egg mixture. Top with vegetable of choice. Bake at 375 for 45 min. to 1hr until quiche becomes golden and crusty and loses all runny areas.
*You can replace the zucchini and onion with many different vegetables to get a variety of
quiches (frozen cauliflower, frozen broccoli, frozen spinach,sauteed mushrooms, or even canned mushrooms)
