Pictured above is a batch of grilled vegetables that I made for Pesach.
Yes, I cook ahead and freeze. I basically freeze everything except for
salads. Clean, cut, and check vegetables. Place on a baking sheet and drizzle lightly with oil,
garlic, paprika, and a bit of salt. Bake at 450 for about 15 minutes till edges look slightly roasted.
Keep a close watch, burnt veggies are not delicious!
Some great vegetables for roasting are: onions, peppers, squash, broccoli, cauliflower.
